Tater Tot Breakfast Casserole is the ultimate brunch champion—easy to make, incredibly delicious, and perfect for feeding a crowd. Preheat the oven to 180ºC (350°F). Grease a casserole dish (9”x13”).
Heat a skillet to medium-high and cook the breakfast sausage until it’s no longer pink. Season with salt and pepper.
1 ½ cups breakfast sausage, Salt and pepper
Whisk together the eggs, Monterey cheese, milk, salt, and pepper in a large bowl.
8 large eggs, 1 cup Monterrey Jack cheese, ½ cup whole milk
Arrange the breakfast sausage in the casserole dish, then top with the Tater Tots.
4 cups frozen Tater Tots
Pour the egg mixture evenly over Tater Tots. Top evenly with the cheddar cheese.
1 cup sharp cheddar cheese
Bake until it’s golden brown, about 45 minutes.
Serve with fresh pepper and herbs.

Notes
Cheese: While I use Monterey Jack and sharp cheddar, feel free to mix up the cheeses. Pepper Jack cheese can add a nice kick!
