Equipment

Ingredients

  • 2 ½ pounds turkey breast
  • 2 tablespoons olive oil
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon thyme
  • ½ teaspoon paprika
  • ½ teaspoon oregano
  • Salt and pepper

For the glaze:

  • ¼ cup maple syrup
  • ¼ cup mustard

Instructions

  • Preheat the oven to 350°F (180°C).
  • Pat the turkey breast dry with a paper towel to remove excess moisture. Brush the turkey with olive oil, ensuring the entire surface is coated. Place it in a baking dish lined with parchment paper to prevent sticking.
2 ½ pounds turkey breast, 2 tablespoons olive oil
  • In a small bowl, mix the onion powder, garlic powder, thyme, paprika, oregano, salt, and pepper. Rub the spice blend evenly over the turkey breast, making sure every side is covered for even seasoning.
½ teaspoon onion powder, ½ teaspoon garlic powder, ½ teaspoon thyme, ½ teaspoon paprika, ½ teaspoon oregano, Salt and pepper
  • Place the turkey in the oven and roast for 1 to 1 ½ hours, or until the internal temperature reaches 165°F (74°C). While the turkey is roasting, prepare the glaze by whisking together the maple syrup and mustard until smooth.
¼ cup maple syrup, ¼ cup mustard
  • Once the turkey is cooked, remove it from the oven and brush the glaze generously over the top. Return it to the oven for an additional 5 minutes, allowing the glaze to caramelize. Let the turkey rest for a few minutes before slicing and serving. Use the pan drippings to enhance the flavor of the slices.

Notes

  • Dry is Key: Drying the turkey with a paper towel helps the seasoning stick better and creates that perfect roast texture.
  • Don’t Skip the Thermometer: It’s the easiest way to avoid undercooking or overcooking your turkey.
  • Generous Seasoning: Don’t hold back on the spice rub—it’s where the flavor magic happens.
  • Glaze Timing is Everything: Apply the glaze during the last few minutes of roasting to keep it from burning but still get that caramelized finish.
  • Rest It: Letting the turkey rest after roasting ensures the juices settle and keep the meat tender.
  • Save the Drippings: The drippings in the pan are bursting with flavor—use them to drizzle over the turkey or as a base for gravy.
  • Add Your Twist: Want some extra zing? Toss in a pinch of cayenne to the rub or a splash of balsamic vinegar to the glaze for more depth.
  • Easy Cleanup: Parchment paper or foil in the baking dish makes cleanup quick and painless.
