Ingredients
 
 

  • 8 eggs
  • 1 cup sour cream
  • ¼ cup milk
  • 2 cups shredded cheddar cheese divided
  • salt and pepper
  • 1 tablespoon olive oil
  • 4 green onions sliced
  • ½ green bell pepper diced
  • ½ red bell pepper diced
  • ½ cup red onion diced
  • 1 cup broccoli florets

Instructions
 

  • Preheat the oven to 180ºC (350ºF). Spray a baking dish with cooking spray.
  • In a large bowl, whisk together the eggs, sour cream, milk, 1½ cups of shredded cheese, and a pinch of salt and pepper until the mixture is well combined. Set the bowl aside.

  • Heat a large skillet over medium heat and add the olive oil. Add the sliced green onions, diced green and red bell peppers, and diced red onion. Sauté for 5-7 minutes until the vegetables start to soften. Add the broccoli florets and cook for another 2 minutes until they are slightly tender.

  • Transfer the cooked vegetables to the prepared baking dish, spreading them evenly. Pour the egg mixture over the vegetables, ensuring they are well covered. Sprinkle the remaining ½ cup of shredded cheese on top.

  • Bake the casserole in the preheated oven for 35-40 minutes, or until the top is golden brown and the center is set. Remove from the oven and let it rest for a few minutes before slicing and serving.
