Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Scrub the potatoes thoroughly and pierce them with a fork all around.

Place the potatoes on the prepared baking sheet and rub each with olive oil.

Place in the oven and bake uncovered for 45 minutes to an hour, or until the potatoes are soft all the way through.
While the potatoes are baking, prepare the BBQ chicken filling. In a bowl, combine the shredded chicken, BBQ sauce, salt, and pepper.

Cut the potatoes ¾ of the way down. Mash the inside of the potatoes with a fork. Stuff with BBQ chicken, then return to the oven for 5 to 10 minutes, or until the chicken is heated through.
Remove from the oven and top immediately with shredded cheddar cheese. Garnish with sour cream and chopped cilantro. Enjoy!
