Ingredients
 
 

  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • 1 teaspoon fresh rosemary
  • 1 teaspoon fresh oregano
  • Salt and pepper
  • 6 bone-in skin-on chicken thighs
  • 5 medium apples cored and cut into ¼-inch slices
  • 1 pound potatoes skin on, cut into ¼-inch slices
  • 1 large onion sliced

Instructions
 

  • Preheat the oven to 400ºF (200°C). Lightly spray the top and bottom of a pan with cooking spray.
  • Mix the olive oil, garlic cloves, rosemary, oregano, salt and pepper in a small bowl or mason jar.

  • Layer the apples, potatoes, and onions in the bottom of the pan. Place the chicken thighs on top and brush the dressing.
    5 medium apples, 1 pound potatoes, 1 large onion, 6 bone-in
  • Roast in the oven for about 1 hour, until the chicken juices run clear and an instant-read thermometer inserted into the thickest part of the thigh reads 165ºF (70°C).
  • Serve the apples, potatoes, and onions alongside the chicken thighs.

Notes

  • Chicken: Bone-in, skin-on chicken thighs work best for juicy results, but boneless skinless thighs can be used if you prefer, or even chicken breasts in a pinch!
  • Apples: Go for firm, slightly tart apples like Granny Smith or Honeycrisp—they hold up well during baking and balance the savory flavors.
  • Don’t skip the thermometer: An instant-read thermometer ensures your chicken is perfectly cooked without guessing.
  • Get creative with spices: Swap rosemary and oregano for thyme, basil, or paprika if that’s what you have on hand.
  • Keep the skins on your potatoes: They add texture and hold their shape better during roasting.
  • Mix it up with veggies: Try swapping the potatoes and onions for sweet potatoes, green beans, or brussels sprouts.
  • Let it rest: Let the chicken rest for a few minutes after baking to lock in the juices.
  • Make ahead: Prep the veggies, apples, and dressing in advance, then assemble and bake when you’re ready.

Storage and Reheating Instructions

  • Fridge: Once the chicken has cooled completely, place it in an airtight container along with the roasted apples, potatoes, and onions. Pop it in the fridge, and it’ll stay fresh for up to 4 days.  
  • Reheat: When you’re ready to reheat, use the oven for the best results. Heat at 350ºF (175°C) until everything is warmed through, or microwave it for a quicker option. Just be sure not to overheat, as it might dry out the chicken.
