These baked beef tacos are perfect for taco night! Crispy shells, juicy seasoned beef, gooey melted cheese, and fresh toppings come together for a flavor-packed bite every time. Whether it’s a busy weeknight dinner or a casual gathering, these tacos are quick to make, fun to eat, and guaranteed to please.

Ingredients
 
 

  • 8 hard taco shells
  • 1 pound beef
  • 1 ounce packet taco seasoning
  • 2 tablespoons water
  • 1 tablespoon olive oil
  • 1 medium yellow onion
  • 2 garlic cloves
  • 1 cup shredded cheddar cheese
  • 1 medium tomato
  • 1 jalapeno
  • 1 medium red onion
  • 3 tablespoons cilantro
  • Sour cream
  • 1 lime optional

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Chop the yellow onion and mince the garlic. Heat a large pan over medium heat and add the olive oil. Add the garlic and onion, cooking until the onion is translucent.

  • Add the beef and cook until browned, about 7 to 10 minutes. Drain the grease.

  • Mix in the water and taco seasoning. Set aside.

  • Spray a 9x13-inch pan with cooking spray.
  • Arrange all the taco shells in the baking pan, pressed against each other so they stand up. Spoon beef filling into each taco shell and sprinkle with cheese.

  • Bake for 8 to 10 minutes, or until the cheese is melted and the taco shells are slightly browned.
  • Prepare the toppings by chopping the tomato, red onion, and cilantro. Slice the jalapeno.

  • Remove tacos from the oven and garnish with toppings. Squeeze on fresh lime juice, if desired. Enjoy!

Notes

  • Beef swaps: Ground turkey or ground chicken works perfectly for a lighter option. Just follow the same steps for seasoning and cooking.
  • Spice level: Add more chili powder or jalapeños for extra heat, or skip them if you prefer a milder taco.
  • Homemade taco seasoning: I love making my own taco seasoning! It makes tacos taste amazing. It has 9 simple ingredients: chili powder, cumin, garlic powder, paprika, onion powder, sea salt, black pepper.
  • Cheese: Try Monterey Jack, pepper jack, or a blend of your favorites for a cheesy twist.
  • Prevent soggy shells: Add a small layer of shredded cheese to the bottom of each shell before the beef mixture. The cheese melts and creates a barrier against moisture.
  • Batch it: Double the recipe if you’re feeding a crowd—these tacos are always a hit at parties!
  • Make ahead: You can prepare the beef filling in advance and store it in the fridge for up to 3 days. Assemble and bake the tacos fresh for the best texture.
