Ingredients
 
 

  • 1 ½ cups breakfast sausage
  • Salt and pepper
  • 8 large eggs
  • 1 cup Monterrey Jack cheese shredded
  • ½ cup whole milk
  • 4 cups frozen Tater Tots
  • 1 cup sharp cheddar cheese shredded

To serve:

  • Fresh pepper
  • Herbs

Instructions
 

  • Grease a casserole dish (9”x13”).
  • Heat a skillet to medium-high and cook the breakfast sausage until it’s no longer pink. Season with salt and pepper.

  • Whisk together the eggs, Monterey cheese, milk, salt, and pepper in a large bowl.

  • Arrange the breakfast sausage in the casserole dish, then top with the Tater Tots.
    4 cups frozen Tater Tots
  • Pour the egg mixture evenly over Tater Tots. Top evenly with the cheddar cheese.

  • Bake in the air fryer at 160ºC (325°F) for 20 minutes until it’s golden brown.
  • Serve with fresh pepper and herbs.

Notes

  • Pre-cooked sausage works too: If you're short on time, use pre-cooked sausage to skip a step.
  • Sausage swaps: Ground beef, turkey, or even crispy bacon are great substitutes. Veggie sausage also works for a meat-free version.
  • Customize the mix-ins: Add bell peppers, mushrooms, or green onions to the egg mixture for extra flavor and texture.
  • Cheeses: Feel free to swap Monterey Jack and cheddar for your favorites, like mozzarella or pepper jack.
  • Check doneness: The casserole is ready when the eggs are set, and the top is golden brown. If needed, add a few extra minutes in the air fryer.
