Preheat and Prep

Boil Ravioli

Cook the cheese ravioli according to the package instructions but keep them al dente. They’ll continue to cook in the oven, so you want them just right.

Sauté Veggies

Combine and Layer

Add the drained ravioli to the creamy veggie mix, ensuring each piece is nicely coated. Then, transfer everything into a 9×13 casserole dish. Sprinkle over the shredded Parmesan cheese evenly.

Bake

Ingredients
 
 

  • 1 package (20-ounce) cheese ravioli
  • 12 fresh asparagus trimmed and chopped
  • 1 tablespoon butter
  • 2 cups mushrooms sliced
  • 2 shallots finely chopped
  • 2 garlic cloves minced
  • 1 cups heavy cream
  • 8 fresh sage leaves thinly sliced
  • 1 teaspoon lemon salt
  • 1 pinch pepper
  • ¼ cup shredded Parmesan cheese
  • ¼ cup walnuts coarsely chopped and toasted

Instructions
 

  • Preheat the oven to 180ºC (350°F). In a large saucepan, cook ravioli according to package directions. Drain.

  • In a large skillet, heat butter over medium-high heat. Add mushrooms, shallots, and garlic, cook for 5 minutes. Add the asparagus, cook until mushrooms and asparagus are tender.

  • Stir in heavy cream, sage, and season with salt and pepper.

  • Add the ravioli to the sauce and heat through.
  • Transfer to a 9×13 casserole dish and sprinkle with cheese.
