Add the sliced onion, bell pepper, salt, and pepper to the skillet, cooking until tender and lightly browned, about 6 to 9 minutes.

Add steak, garlic powder, and Worcestershire sauce to the skillet. Cook 3–4 minutes until fully done.

Prepare the Buns

Preheat your oven to 350°F (180°C). Without separating the rolls, slice them horizontally to separate the tops from the bottoms.

Place the bottom half on a parchment-lined baking sheet for easy cleanup.

Assemble the Sliders

Spread the cooked steak and veggie mixture evenly over the bottom buns. Layer the provolone cheese on top.

Place the tops of the rolls back on. For an optional flavor boost, spread a thin layer of mayonnaise on the underside of the top rolls.

Brush with Butter and Bake

Melt the butter in a microwave-safe bowl and stir in the chopped parsley. Brush this butter mixture generously over the tops of the buns.

Bake in the preheated oven for about 15 minutes, or until the tops are golden brown and everything is heated through.

Serve

Remove the sliders from the oven, cut them into individual pieces, and serve immediately.

Notes

  • Thin Slices: For tender bites, use a very sharp knife or even slightly freeze the steak for about 20 minutes to make it easier to slice thinly. This thin cut helps the steak cook quickly and absorb more flavor.
  • Cheese Choice: While provolone adds a classic Philly cheesesteak flavor, feel free to switch it up with Swiss, cheddar, or even pepper jack for a spicy kick. Melting the cheese over the hot steak ensures it gets gooey and evenly spread.
  • Extra Flavor: Adding a touch of hot sauce to the Worcestershire mixture will give a subtle, spicy kick.
  • Browning Tip: Let the steak cook undisturbed for a minute to develop a caramelized, browned surface.
  • Avoid Soggy Buns: Line the baking sheet with parchment paper for easy cleanup and to keep the bottoms from getting too soft.
  • Make-Ahead Option: To save time, you can cook the meat and veggies in advance, store them in the fridge, and simply assemble and bake the sliders when you’re ready to serve. This makes them perfect for parties or busy nights.
