Lamb chops are one of my favorite quick meals because they cook fast and always feel a little fancy. A little prep makes all the difference, and I’ll walk you through exactly how to do it.

Season the Lamb

In a small bowl, mix the chopped rosemary, salt, black pepper, minced garlic, and 2 tablespoons of olive oil.

Stir well, then rub this mixture all over the lamb chops, massaging it into the meat. Cover and let them sit at room temperature for 30 to 45 minutes so the flavors really soak in.

Rub this mixture all over the lamb chops and sear for 2-3 minutes.

Sear to Perfection

Heat the remaining 2 tablespoons of olive oil in a cast iron skillet or oven-proof pan over high heat. Once the oil is shimmering, add the lamb chops. Sear for about 2–3 minutes per side until they develop a deep golden-brown crust.

Let Them Rest

  • In a small bowl, combine the rosemary, salt, pepper, minced garlic, and 2 tablespoons of olive oil. Mix well, then rub the mixture evenly over the lamb chops, massaging it into the meat. Cover and let the chops sit at room temperature for 30 to 45 minutes to allow the flavors to infuse.

  • Remove the chops from the pan and let them rest for 5 minutes before serving to allow the juices to redistribute.
