Preheat and Prepare the Egg Mixture

Start by preheating your oven to 180ºC and greasing a baking dish with cooking spray.

In a large bowl, whisk together the eggs, sour cream, milk, 1½ cups of shredded cheese, salt, and pepper until smooth. Set the mixture aside for a bit.

Cook the Vegetables

Grab a large skillet and heat it over medium heat. Add the olive oil and toss in the green onions, diced green and red bell peppers, and red onion.

Sauté for about 5-7 minutes until they’re soft and fragrant. Add the broccoli florets and cook for another 2 minutes, just until they start to soften.

Assemble and Bake

Spread the cooked vegetables evenly in the prepared baking dish. Pour the egg mixture over the top, making sure it covers all the veggies. Sprinkle the remaining ½ cup of shredded cheese on top.

Pop it in the oven and bake for 35-40 minutes, or until the casserole is golden brown and set in the middle.

Ingredients
 
 

  • 8 eggs
  • 1 cup sour cream
  • ¼ cup milk
  • 2 cups shredded cheddar cheese divided
  • salt and pepper
  • 1 tablespoon olive oil
  • 4 green onions sliced
  • ½ green bell pepper diced
  • ½ red bell pepper diced
  • ½ cup red onion diced
  • 1 cup broccoli florets

Instructions
 

  • Preheat the oven to 180ºC (350ºF). Spray a baking dish with cooking spray.
  • In a large bowl, whisk together the eggs, sour cream, milk, 1½ cups of shredded cheese, and a pinch of salt and pepper until the mixture is well combined. Set the bowl aside.

  • Heat a large skillet over medium heat and add the olive oil. Add the sliced green onions, diced green and red bell peppers, and diced red onion. Sauté for 5-7 minutes until the vegetables start to soften. Add the broccoli florets and cook for another 2 minutes until they are slightly tender.
