Bake the Potatoes

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup. Scrub the russet potatoes thoroughly and pierce them all over with a fork.

Rub each potato with olive oil and place them on the prepared baking sheet. Bake for 45 minutes to an hour until they’re fork-tender and soft all the way through.

Prepare the BBQ Chicken Filling

While the potatoes bake, get the filling ready. In a large bowl, mix the shredded chicken, BBQ sauce, salt, and pepper. Stir well to coat the chicken in that tangy barbecue goodness.

Stuff the Potatoes

  • 4 russet potatoes
  • 2 tablespoons olive oil
  • 2 ½ cups cooked chicken shredded
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup cheddar cheese shredded

  • 1 cup sour cream
  • 3 tablespoons fresh cilantro

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • Scrub the potatoes thoroughly and pierce them with a fork all around.

  • While the potatoes are baking, prepare the BBQ chicken filling. In a bowl, combine the shredded chicken, BBQ sauce, salt, and pepper.

  • Cut the potatoes ¾ of the way down. Mash the inside of the potatoes with a fork. Stuff with BBQ chicken, then return to the oven for 5 to 10 minutes, or until the chicken is heated through.
  • Remove from the oven and top immediately with shredded cheddar cheese. Garnish with sour cream and chopped cilantro. Enjoy!
