  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • 1 teaspoon fresh rosemary
  • 1 teaspoon fresh oregano
  • Salt and pepper
  • 6 bone-in skin-on chicken thighs
  • 5 medium apples cored and cut into ¼-inch slices
  • 1 pound potatoes skin on, cut into ¼-inch slices
  • 1 large onion sliced

Instructions
 

  • Preheat the oven to 400ºF (200°C). Lightly spray the top and bottom of a pan with cooking spray.
  • Mix the olive oil, garlic cloves, rosemary, oregano, salt and pepper in a small bowl or mason jar.

  • Layer the apples, potatoes, and onions in the bottom of the pan. Place the chicken thighs on top and brush the dressing.

  • Roast in the oven for about 1 hour, until the chicken juices run clear and an instant-read thermometer inserted into the thickest part of the thigh reads 165ºF (70°C).
