How to Make Baked Beef Tacos

A complete printable recipe and the measurements in both US customary and metric are available in the recipe card below.

I’ve got a simple step-by-step guide to make these tacos effortless and fun. You’ll have them hot and ready to serve in no time!

Prepare the Filling

Start by preheating your oven to 400°F (200°C). Chop the yellow onion and mince the garlic. In a large skillet, heat olive oil over medium heat. Sauté the garlic and onion until the onion turns translucent and fragrant.

Cook the Beef

Add the lean ground beef to the skillet, breaking it apart as it cooks. Let it brown fully, which should take about 7–10 minutes. Drain any excess grease from the pan.

Season It Up

Fold in the taco seasoning and a splash of water to coat the beef in all those bold flavors. Taste and adjust the salt if needed. Stir well and then set it aside.

Assemble the Tacos

Spray a 9×13-inch baking dish (or baking sheet) with cooking spray. Arrange your crispy corn tortillas upright in the dish, leaning them against each other so they stay upright.

Fill each shell with the ground beef mixture and sprinkle shredded cheddar cheese on top.

Bake to Perfection

Pop the tacos in the oven and bake for 8–10 minutes. You’ll know they’re ready when the cheese is melted, and the shells are golden and crisp.

Top It Off

Chop the tomato, red onion, and cilantro while the tacos bake. Slice the jalapeño if you like a kick of heat.

Once the tacos are out of the oven, garnish with your favorite toppings, a dollop of sour cream, and a squeeze of lime. You can keep them warm by covering the dish with aluminum foil. Serve hot and enjoy!

Notes

  • Beef swaps: Ground turkey or ground chicken works perfectly for a lighter option. Just follow the same steps for seasoning and cooking.
  • Spice level: Add more chili powder or jalapeños for extra heat, or skip them if you prefer a milder taco.
  • Homemade taco seasoning: I love making my own taco seasoning! It makes tacos taste amazing. It has 9 simple ingredients: chili powder, cumin, garlic powder, paprika, onion powder, sea salt, black pepper.
  • Cheese: Try Monterey Jack, pepper jack, or a blend of your favorites for a cheesy twist.
  • Prevent soggy shells: Add a small layer of shredded cheese to the bottom of each shell before the beef mixture. The cheese melts and creates a barrier against moisture.
  • Batch it: Double the recipe if you’re feeding a crowd—these tacos are always a hit at parties!
  • Make ahead: You can prepare the beef filling in advance and store it in the fridge for up to 3 days. Assemble and bake the tacos fresh for the best texture.

Storage and Reheating Instructions

  • Fridge: Let the tacos cool completely before storing them. Place them in an airtight container in the refrigerator for up to 3 days.
  • Reheating: To reheat, use an oven or air fryer to keep the shells crispy. Avoid microwaving, as it may make the shells soft and soggy.
