Cook the Sausage
Start by heating a skillet over medium-high heat. Cook the breakfast sausage until it’s no longer pink, breaking it into crumbles as it cooks. Season with a pinch of salt and pepper, then set aside.
Whisk the Egg Mixture
In a large bowl, whisk together the eggs, Monterey Jack cheese, milk, salt, and pepper. Make sure it’s all combined well for the perfect creamy consistency.
Assemble the Casserole

- 1 ½ cups breakfast sausage
- Salt and pepper
- 8 large eggs
- 1 cup Monterrey Jack cheese shredded
- ½ cup whole milk
- 4 cups frozen Tater Tots
- 1 cup sharp cheddar cheese shredded
To serve:
- Fresh pepper

Instructions
- Grease a casserole dish (9”x13”).
