Here’s how to put it all together, step by step, and it’s easier than you might think.
Sauté the Vegetables
Heat olive oil in a large skillet over medium heat. I like using a large nonstick skillet to give everything enough room to cook evenly without crowding the pan.
Add the onion, bell pepper, and jalapeño and cook for about 5 minutes until softened.
Add the Chicken and Tomatoes
Stir in the Mexican seasoning, then add the shredded chicken and Rotel tomatoes. Mix everything together well so the seasoning is evenly distributed.

Stir In the Soup and Simmer
Pour in the cream of chicken soup and stir until everything is fully combined. Let it simmer for about 5 minutes. Taste and adjust the seasoning if needed, then remove from the heat.

Layer the Tortillas and Filling
Layer corn tortillas on the bottom of your prepared dish, tearing them if needed to fit. A good ceramic casserole dish gives you enough depth to fit all those layers comfortably without the filling spilling over the sides.
Spread half of the chicken mixture over the tortillas, then sprinkle with half of the cheese.

Add another layer of tortillas, followed by the remaining chicken mixture. Finish with the remaining cheese on top.

Place the dish in the air fryer basket and cook at 350°F (180°C) for 15 to 20 minutes, until heated through and the cheese is melted and lightly golden. I always reach for this basket-style air fryer that gives me enough space to fit a casserole dish comfortably and cook it evenly.
If the top browns too quickly, loosely cover with foil for the last few minutes of cooking.

- 2½ cups Monterey Jack cheese shredded

Notes

- Tear the tortillas to fill gaps: Don’t worry about keeping them whole. Tearing corn tortillas to fit the dish means better coverage and more even layers.
- Simmer the filling before layering: Letting the chicken mixture simmer for the full 5 minutes helps the flavors meld and thickens the sauce so the casserole doesn’t turn out watery.
- Watch the cheese closely in the air fryer: Air fryers can brown the top faster than expected. Start checking at the 15-minute mark, and loosely cover with foil if the cheese is browning too quickly.
