Air Fryer Chocolate Zucchini Bread is the kind of treat I pull out every zucchini season and it never lasts more than a day. Deep, dark, and chocolatey with a tender, moist crumb that the zucchini keeps soft all the way through, and chocolate chips dotted throughout and melted on top in each slice. The air fryer gets it done faster and the results are beautiful every time.

I make this for weekend baking, lunchbox treats, and anytime zucchini is taking over my garden and I need a delicious reason to use it up. It wraps and travels beautifully, holds up for days, and is the kind of bake everyone is happy to find on the counter. Store wrapped at room temperature for up to 3 days, in the fridge for up to a week, or freeze individual slices for up to 3 months.

How to Make Air Fryer Chocolate Zucchini Bread with Step-By-Step Instructions

Prep the Pan and Grate the Zucchini

Lightly grease a 9×5-inch loaf pan or line it with parchment paper, and make sure it fits inside your air fryer basket before you get started. I always use this nonstick loaf pan because it fits perfectly in most air fryer baskets and releases baked goods cleanly every time.

Using a food processor or box grater, finely grate the zucchini until you have 1 1/2 cups. My rotary cheese grater makes quick work of the zucchini and comes with multiple blade attachments for different textures.

Press out excess moisture thoroughly with paper towels or a clean kitchen towel, then set it aside. Skipping this step can make the batter too wet, so don’t rush it.

Mix the Wet Ingredients

In a large mixing bowl, whisk together the eggs, sugar, honey, oil, and vanilla until smooth and well combined.

In a separate bowl, combine the flour, baking soda, cocoa powder, and salt. Stir until everything is well blended and no cocoa clumps remain.

Whisk together the flour, baking soda, cocoa powder, and salt until smooth and lump-free.

Bring the Batter Together

Gradually add the dry mixture to the wet ingredients, stirring by hand just until the batter comes together and is smooth. Gently fold in the grated zucchini and chocolate chips until fully incorporated.

Fill the Pan and Top With Chips

Air Fry the Bread

Place the pan carefully in the air fryer basket and bake at the appropriate temperature for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean or with just a few moist crumbs. I always reach for a cake tester to check the center without leaving a big hole in the loaf.

  • 1 ½ cups finely grated zucchini about 2 medium
  • 2 large eggs
  • ½ cup granulated sugar

  • ½ cup vegetable oil

  • Using a food processor or box grater, finely grate the zucchini. Measure 1 ½ cups, then press out the excess moisture using paper towels or a clean kitchen towel. Set aside.

Notes

Here are a few tips I’ve picked up from making this recipe more than once.
  • Squeeze the zucchini well: Too much moisture in the batter will prevent the bread from setting properly, so take your time pressing it out with paper towels or a clean towel before adding it to the mix.
  • Stir just until combined: Overmixing the batter once the dry ingredients go in can make the bread dense and tough. Stop as soon as the batter looks smooth.
  • Check your pan size first: Not all air fryers fit a standard 9×5-inch loaf pan, so test the fit before filling it with batter to avoid a messy surprise.
  • Start checking at 25 minutes: Air fryers can vary in how they cook, so begin testing with a toothpick at the 25-minute mark and continue baking only if needed.
  • Cool completely before slicing: Cutting into the bread too soon will cause it to crumble. Give it the full cooling time for clean, neat slices.
  • Freeze slices individually: Flash-freeze slices on a baking sheet for about an hour, then transfer them to a freezer bag so they don’t stick together, and you can grab just one at a time.

How to Store Leftovers

Wrap the cooled loaf tightly in plastic wrap or store individual slices in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate it for up to a week, and let slices come to room temperature before serving for the best texture.

To freeze, wrap individual slices in plastic wrap and place them in a freezer-safe bag or airtight container. I love using my reusable freezer bags because they seal tightly and keep slices fresh for up to 3 months without freezer burn.

Thaw overnight in the fridge or set a slice out on the counter for about 30 minutes before enjoying.
