If you follow my simple steps, you’ll see just how easy it is to make perfectly rolled, crowd-pleasing Turkey Pinwheels that slice cleanly and taste fresh every time.

Mix the Filling

In a medium bowl, combine softened cream cheese, chopped green onions, and dried cranberries. A pair of herb scissors makes chopping green onions quick and mess-free.

Stir until the mixture is smooth, creamy, and evenly blended. It should spread easily without tearing the tortilla. This silicone spatula is perfect for scraping down the sides and making sure everything’s combined.

Layer the Fillings

Lay the tortilla on a clean surface. Spread the cream cheese mixture evenly over the tortilla, leaving a small border around the edges to prevent the filling from oozing out once you start rolling. A spreader tool like this one makes spreading super smooth and controlled.

Take your time spreading it in a thin, even layer to keep each bite balanced and prevent lumps. Add mozzarella cheese slices in an even layer, followed by sliced turkey and fresh romaine lettuce. Try to keep the layers flat and even for smooth rolling.

Lay tortilla flat, spread cream cheese mixture, then layer mozzarella, turkey, and romaine lettuce evenly on top.

Roll and Chill

Starting at one edge of the tortilla, roll it up as tightly as you can without squeezing out the filling. A snug roll helps lock the fillings in place so they don’t slide out when slicing. Once you reach the end, press gently along the seam to help it seal the roll closed so it doesn’t unravel.

Wrap the rolled log in plastic wrap and place it in the refrigerator for at least 1 hour. This helps it firm up and makes slicing much cleaner later. I use BPA-free plastic wrap that clings tightly to keep things sealed while chilling.

Wrap the roll in plastic wrap and refrigerate for at least 1 hour, then unwrap and slice into 1-inch pieces.

Slice and Serve

Unwrap the chilled roll and place it on a cutting board. Using a sharp knife, cut it evenly into 1-inch pieces, wiping the blade between slices if needed to keep the slices neat. A chef’s knife works best here, so you don’t flatten the roll as you slice.

Arrange the pinwheels on a platter and serve them chilled for the best flavor and texture. Enjoy!

If you’re taking them to a party, potluck, or picnic, insert a toothpick into each piece so they hold their shape perfectly, then pack them in a hard-sided container so they don’t get squished. To keep them chilled and fresh, use an insulated casserole carrier like this.

Notes

  • Soften the cream cheese: Bring the cream cheese to room temperature so it spreads smoothly and doesn’t tear the tortilla.
  • Season with salt and pepper: Add a light pinch of both to the cream cheese mixture to bring out the flavors of the turkey and cranberries without overpowering them. A salt and pepper grinder set makes it easy to add a pinch of freshly ground seasoning.
  • Mix in fresh herbs: Stir a bit of finely chopped parsley, dill, or thyme into the cream cheese for a subtle aroma and freshness that complements the turkey.
  • Use deli turkey breast for freshness: You can slice it thinly yourself from the deli counter for a cleaner flavor and more tender texture that rolls up perfectly.
  • Add fresh mix-ins for texture and flavor: Layer thin slices of cucumber with the lettuce for extra texture and a refreshing bite that still keeps the classic flavor balance. For a Mediterranean touch, you can also add a few finely chopped olives for a salty, briny accent.
  • Swap romaine for spinach: Use baby spinach instead of romaine if you prefer a softer texture and deeper green color. Spinach pairs especially well with a little feta cheese or a drizzle of pesto if you want to lean into a fresh, Italian-inspired roll-up.
  • Experiment with flavor boosters: Add a few tangy or zesty elements to the filling for extra depth and variety. Try mixing in chopped sun-dried tomatoes for a burst of richness or spreading a thin layer of ranch or honey mustard sauce for a light, flavorful kick.
  • Chill before cutting: Let the roll firm up in the fridge for at least an hour. This simple step makes all the difference in how cleanly they slice. Once you’re ready to slice it, use a sharp chef’s knife to avoid flattening the pinwheels.

Recipe Notes and Expert Tips

I’ve got a few simple tips to make sure your Turkey Pinwheels come out neat, flavorful, and perfectly rolled every time.

How to Store Leftovers

Keep any leftover pinwheels covered in an airtight container or wrap them individually in plastic wrap first, then store in the fridge for up to 3 to 4 days. Make sure they’re kept cold so the cream cheese stays fresh and the tortillas soft and don’t dry out.

These aren’t ideal for freezing, though, as the texture of the cream cheese spread can change once thawed. To prevent fridge odors from affecting them, I use these glass food storage containers to keep the pinwheels fresh.
