How to Make Baked Oatmeal with Step-By-Step Instructions

Preheat and Prepare

Start by preheating your oven to 350°F (180°C) and lightly grease a 9×9-inch baking pan with cooking spray to prevent sticking.

Mix Dry Ingredients

In a large bowl, combine the oats, baking powder, cinnamon, salt, and chopped pecans. Give it a quick stir to mix everything evenly.

Whisk the Wet Ingredients

In a medium bowl, whisk together the eggs, milk, maple syrup, and vanilla extract. This will be the base that binds the baked oatmeal together.

Combine Everything

Pour the wet ingredients over the oat mixture. Add the melted butter (or you can use coconut oil) and most of the frozen berries, saving a few to sprinkle on top. Gently fold everything together until well combined.

Transfer to the Baking Dish

Pour the mixture into your prepared baking dish, smoothing the top with a spatula. Scatter the reserved berries over the surface for a pop of color.

Bake

Ingredients
 
 

  • 2 ½ cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 ¼ teaspoons cinnamon
  • ½ teaspoon salt
  • ½ cup pecans chopped
  • 2 eggs
  • 1 ¾ cups milk or non-dairy milk
  • ½ cup maple syrup
  • 2 ½ teaspoons pure vanilla extract
  • ¼ cup butter melted
  • 2 ½ cups berries frozen
  • 1 tablespoon brown sugar for sprinkling over as topping
  • Greek yogurt or whipped cream for topping

Instructions
 

  • Preheat your oven to 350°F (180°C) and lightly grease a 9×9-inch baking pan with spray oil.
  • In a large mixing bowl, add the oats, baking powder, cinnamon, salt, and chopped pecans. Toss these dry ingredients together until evenly mixed.

  • In a separate bowl, whisk together the eggs, milk, maple syrup, and vanilla extract. Pour the wet mixture over the dry ingredients. Add the melted butter and most of the berries, saving a few to sprinkle on top. Gently fold everything together until well combined.

How to Store Leftover Baked Oatmeal

Leftover baked oatmeal can be stored in an airtight container in the fridge for up to 4 days. To reheat, simply pop a portion into the microwave or oven until warmed through.

This recipe freezes well, too. Wrap individual portions in plastic wrap and place them in the freezer for up to 3 months. Thaw overnight in the fridge before reheating.
