This recipe is one of my favorites because it is simple to follow and uses the air fryer to speed things up while keeping the flavors rich and bold. Here’s how to make it step by step.
Prep the Base
Add chopped onion and olive oil to a baking dish or a pot that is oven-safe and fits your air fryer. Cook it in the air fryer at 180ºC (350°F) for about 5 minutes until the onion becomes fragrant and slightly golden.
Build the Flavor
Stir in minced garlic, chopped poblano peppers, jalapeño (if you like a little heat), cumin, smoked paprika, chili powder, salt, and pepper. Let the ingredients cook in the air fryer for another 5 minutes to let the spices bloom and become aromatic.

Cook the Chicken
Add the chicken breasts and pour in 4 cups of low-sodium chicken broth. Partially cover the dish and simmer in the air fryer for 20 minutes, or until the chicken is tender and cooked through.
Shred and Stir
Once the chicken is cooked, shred it with two forks. Stir the cream cheese into the broth until smooth, then add the white beans, salsa verde, and shredded cheddar cheese. Cook for 5 more minutes until the cheese melts and everything is well combined.

Finishing Touches
Remove the chili from the air fryer and stir in chopped fresh cilantro. If you prefer a thinner chili, add a bit more chicken broth at this stage.
Serve it Up
Scoop the chili into bowls and add your favorite toppings. Think sour cream, extra cheddar cheese, avocado slices, a squeeze of lime juice, and a sprinkle of cilantro.

- 2 tablespoons olive oil
- 1 cup yellow onion chopped
- 4 cloves garlic minced
- 2 poblano peppers seeded and chopped
- 1 jalapeño seeded (optional)
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- Salt and pepper
- 1 pound boneless skinless, chicken breasts
- 4-6 cups low-sodium chicken broth
- 4 ounces cream cheese at room temperature
- 1 can white beans drained
- ½ cup salsa verde
- 1 cup cheddar cheese shredded
- ½ cup fresh cilantro chopped
Toppings:
- Avocado
- Cheddar cheese
- Sour cream
- Lime
- Cilantro
