Prep and Season the Vegetables

Roast in the Air Fryer
Transfer the seasoned vegetables to the prepared air fryer basket and spread them out in a single layer if possible to help them roast evenly.
Set your air fryer to 325°F (160°C) and roast for 18 minutes until the tomatoes are bubbly, the onion is softened, and everything has golden, caramelized edges. You’ll notice the tomatoes will release some of their juices, and the garlic will turn golden brown.

Blend the Soup Base
Transfer the roasted vegetables to a large pot. The garlic should peel easily now when you press the cloves with your hands, allowing the soft, sweet garlic to slide right out. A stockpot like this one works well because it has enough space to prevent splashing when simmering and blending.
Add half of the vegetable broth and bring everything to a boil over medium-high heat, then turn off the heat once it’s hot. Use an immersion blender to blend the mixture until completely smooth and creamy.
Finish and Adjust
Add the remaining vegetable broth as needed to reach your preferred consistency. Some people like thicker soup, while others prefer it a bit thinner.
Stir in the half-and-half and optional heavy cream to achieve a silky, creamy texture, then taste and adjust the salt and pepper as needed. The soup should be rich, balanced, and full of roasted flavor.
Garnish and Serve
Ladle the soup into bowls and garnish with fresh herbs such as basil, parsley, or thyme. I love serving this soup in these deep soup bowls because they keep it warm longer and leave plenty of room for garnishes, a drizzle of olive oil, and optional grated Parmesan cheese for extra savory depth.

Instructions
- Line the air fryer basket with parchment paper.

Notes
- Don’t skip the parchment paper: Lining the basket prevents the tomatoes from sticking and makes cleanup so much easier after roasting.
- Leave the garlic unpeeled: The skins protect the garlic from burning in the air fryer, and they’ll slip right off after roasting when the cloves are soft and sweet.
- Blend while hot: Processing the soup when it’s still hot creates a smoother, silkier texture than blending it cold and reheating.
- Adjust the consistency: Start with half the broth and add more gradually until you reach your preferred thickness, since it’s easy to thin the soup out but much harder to thicken it later.
- Reheat gently: Warm the soup over low heat on the stovetop, stirring frequently to prevent the half-and-half from separating or scorching on the bottom.

How to Store Leftovers
Let the soup cool completely before transferring it to an airtight container. It’ll stay fresh in the fridge for up to 4 days. Reheat it gently on the stovetop or in the microwave, stirring occasionally. You can also reheat it in the oven, but it’s not ideal and works best only for larger batches in an oven-safe dish with a lid or foil.
For longer storage, freeze the soup in freezer-safe containers or heavy-duty freezer bags for up to 3 months. You can also use these souper cubes for freezing individual portions so you can reheat only what you need. Leave about an inch of headspace since the soup will expand as it freezes.
Thaw overnight in the fridge before reheating, and you might need to whisk it smooth again since the half-and-half can separate slightly during freezing.
