This really is an easy air fryer recipe, follow my simple steps to achieve that crispy, golden air fryer beef pot pie.

Blind Bake the Bottom Crust

Grease a pie dish and roll out the bottom puff pastry sheet. Make sure it’s big enough to reach the rim of the pie dish so you can seal the edges with the top puff pastry sheet later.

Place the puff pastry in the pie dish, then put it in the air fryer at 350°F (180°C) for 5 minutes.

Pre-baking helps create a sturdy base that won’t turn soggy once the filling is added.

Cook the Beef

Heat a skillet over medium-high heat and drizzle in the olive oil. Add the ground beef and season with salt and pepper. Cook it on all sides until browned, breaking it apart as it cooks. Once done, transfer the beef to a plate and set it aside.

Sauté the Vegetables

Melt the butter in the same skillet, then toss in the chopped onion, carrots, celery, and garlic. Stir as they cook for about 7 minutes, until the vegetables become tender.

Make the Sauce

Sprinkle the flour over the vegetables and stir until a thick paste forms. Slowly pour in the beef broth while stirring constantly to prevent lumps. Let the mixture simmer for a couple of minutes until it starts to thicken.

Add the Remaining Ingredients

Stir in the Worcestershire sauce, half-and-half, frozen peas, thyme, and rosemary. Add the cooked beef back into the skillet and mix well.

Adjust seasoning with salt and pepper as needed.

Assemble the Pot Pie

Take the pre-baked pie crust out of the air fryer and pour in the beef mixture. Place the second puff pastry sheet on top, pressing the edges with the bottom crust to seal it well.

Prepare the blind-baked crust. Spoon the beef mixture into it.
A hand uses a knife to cut dough on an unbaked beef pot pie crust, surrounded by a rosemary sprig, olive oil, and an egg wash bowl on the countertop.
Lay the second puff pastry sheet over the filling and press the edges to seal. Score a spiral or decorative pattern on the top crust with a sharp knife.

Cut a few small slits in the crust—this helps release steam so the filling doesn’t get too soupy inside while baking.

Air Fry the Pot Pie

Beat an egg and use it to coat the top crust with a pastry brush for a golden finish (you could use melted butter if you prefer). Bake it in the air fryer for about 15 minutes or until the top is golden brown and crisp.

Serve and Enjoy

Remove the pot pie from the air fryer and let it cool for a few minutes before slicing into it. Serve warm and enjoy!

Notes

  • Pre-bake the crust: Blind baking the bottom puff pastry keeps it crisp and prevents it from becoming soggy.
  • Brown the beef well: Cooking the beef until it’s fully browned enhances the flavor and prevents excess grease from affecting the filling.
  • Thicken the sauce properly: Stir the flour into the vegetables thoroughly before adding the broth to avoid any lumps. Let it simmer until the mixture thickens slightly.
  • Let the filling cool slightly: If the filling is too hot when added to the crust, it can cause the bottom to soften too much. Let it sit for a few minutes before assembling the pie.
  • Seal the edges tightly: Press the top and bottom crust together well to keep the filling inside while baking.
  • Brush with egg wash: This step gives the top crust a beautifully golden-brown shine and adds crispiness.
  • Check doneness early: Air fryer models vary, so check the pot pie after 12 minutes. If needed, add a few extra minutes until the crust is golden and crisp.

Recipe Notes and Expert Tips

I have a few tips to help you get the best results when making this air fryer beef pot pie. These small details make a big difference in how your pot pie turns out.

How to Store Leftover Air Fryer Beef Pot Pie

Leftover beef pot pie can be stored in an airtight container in the refrigerator for up to 3 days. When ready to reheat, preheat the air fryer to 350°F, place the leftover pot pie inside, and heat for 10-15 minutes until the crust is crisp and the filling is warmed through.

I always keep frozen pot pies in the freezer, they are so handy. If you want to freeze it, you can do so before or after baking. For an unbaked pot pie, wrap it tightly in plastic wrap and aluminum foil before freezing for up to 3 months. If already baked, let it cool completely before wrapping and freezing.

Remove any wrap or non-oven-safe material before putting the frozen pot pie in the oven. Increase the cooking time as needed, but avoid overheating to prevent a soggy crust.

For food safety, make sure the internal temperature reaches at least 165°F before serving.

What to Serve with Air Fryer Beef Pot Pie

I love this air fryer pot pie because it pairs well with different simple side dishes. A fresh green salad, roasted veggies, or creamy mashed potatoes make great sides without stealing the spotlight.

If you want something lighter, steamed green beans or a side of crusty bread are a perfect match.
