Making this air fryer roasted tomato soup is simpler than you might think, and the results are absolutely worth it. Just follow my easy steps!

Prep and Season the Vegetables

Line the air fryer basket with parchment paper to prevent sticking and make cleanup easier. I use this parchment paper to keep food from sticking and make cleanup quick and effortless after cooking.

In a large bowl, toss the tomatoes, quartered onion, and unpeeled garlic cloves with olive oil, dried thyme, salt, and pepper until everything’s well coated. The olive oil helps the vegetables caramelize beautifully and prevents sticking.

Roast in the Air Fryer

Transfer the seasoned vegetables to the prepared air fryer basket and spread them out in a single layer if possible to help them roast evenly.

Set your air fryer to 325°F (160°C) and roast for 18 minutes until the tomatoes are bubbly, the onion is softened, and everything has golden, caramelized edges. You’ll notice the tomatoes will release some of their juices, and the garlic will turn golden brown.

Air-fry the vegetables for 18 minutes, then transfer them to a pot with half the broth, boil, and blend with an immersion blender until smooth.

Blend the Soup Base

Transfer the roasted vegetables to a large pot. The garlic should peel easily now when you press the cloves with your hands, allowing the soft, sweet garlic to slide right out. A stockpot like this one works well because it has enough space to prevent splashing when simmering and blending.

Add half of the vegetable broth and bring everything to a boil over medium-high heat, then turn off the heat once it’s hot. Use an immersion blender to blend the mixture until completely smooth and creamy.

Finish and Adjust

Add the remaining vegetable broth as needed to reach your preferred consistency. Some people like thicker soup, while others prefer it a bit thinner.

Stir in the half-and-half and optional heavy cream to achieve a silky, creamy texture, then taste and adjust the salt and pepper as needed. The soup should be rich, balanced, and full of roasted flavor.

Garnish and Serve

Ladle the soup into bowls and garnish with fresh herbs such as basil, parsley, or thyme. I love serving this soup in these deep soup bowls because they keep it warm longer and leave plenty of room for garnishes, a drizzle of olive oil, and optional grated Parmesan cheese for extra savory depth.

Serve with toasted bread slices on the side for dipping, as the crusty bread soaks up the soup beautifully. You can also drizzle a little extra olive oil on top or add a swirl of cream for presentation. Enjoy!

Ingredients
 
 

  • 8 tomatoes
  • 1 onion peeled and quartered
  • 4 garlic cloves unpeeled
  • 2 tablespoons olive oil
  • 1 teaspoon dried or fresh thyme
  • Salt and pepper
  • 2 cups vegetable broth
  • ½ cup half-and-half

To serve:

  • Toasted slices
  • Fresh herbs

Instructions
 

  • Line the air fryer basket with parchment paper.
  • In a big bowl, combine the tomatoes, onion, garlic, olive oil, dried thyme, salt and pepper until all veggies are covered. Transfer the tomatoes, onion and garlic to the air fryer basket and bake at 325°F (160°C) for 18 minutes, or until they are bubbly and roasted.
    8 tomatoes, 1 onion, 4 garlic cloves, 2 tablespoons olive oil, 1 teaspoon dried or fresh thyme, Salt and pepper
  • Transfer the veggies to a pot and peel the garlic (you only need to press it with your hands and the garlic will come out as a pure). Add half of the vegetable broth and bring to a boil, turn off the heat once it’s hot.
  • Process the mixture with an immersion blender until smooth. Add more broth if needed and the half and half and mix well. Adjust salt and pepper.

  • Garnish with fresh herbs and serve with toasted slices.

Notes

Here are my top tips for making the best air fryer tomato soup:
  • Don’t skip the parchment paper: Lining the basket prevents the tomatoes from sticking and makes cleanup so much easier after roasting.
  • Leave the garlic unpeeled: The skins protect the garlic from burning in the air fryer, and they’ll slip right off after roasting when the cloves are soft and sweet.
  • Blend while hot: Processing the soup when it’s still hot creates a smoother, silkier texture than blending it cold and reheating.
  • Adjust the consistency: Start with half the broth and add more gradually until you reach your preferred thickness, since it’s easy to thin the soup out but much harder to thicken it later.
  • Reheat gently: Warm the soup over low heat on the stovetop, stirring frequently to prevent the half-and-half from separating or scorching on the bottom.
  • Freeze in portions: Pour cooled soup into freezer-safe containers in single-serving portions so you can thaw exactly what you need without defrosting the whole batch.

How to Store Leftovers

Let the soup cool completely before transferring it to an airtight container. It’ll stay fresh in the fridge for up to 4 days. Reheat it gently on the stovetop or in the microwave, stirring occasionally. You can also reheat it in the oven, but it’s not ideal and works best only for larger batches in an oven-safe dish with a lid or foil.

For longer storage, freeze the soup in freezer-safe containers or heavy-duty freezer bags for up to 3 months. You can also use these souper cubes for freezing individual portions so you can reheat only what you need. Leave about an inch of headspace since the soup will expand as it freezes.

Thaw overnight in the fridge before reheating, and you might need to whisk it smooth again since the half-and-half can separate slightly during freezing.

What to Serve With Air Fryer Tomato Soup

Grilled cheese sandwiches are the classic pairing. The crispy, buttery bread and melty cheese are perfect for dipping into the creamy soup. I also love serving it with a simple green salad dressed with lemon vinaigrette for a light, balanced meal. Crusty sourdough bread, garlic bread, or cheesy breadsticks all work beautifully for soaking up every last drop.

For a heartier meal, add a Caesar salad or roasted vegetables on the side. The soup also pairs well with quesadillas, paninis, or even a charcuterie board if you’re serving it as a starter. It’s versatile enough to work with almost any casual lunch or dinner spread.
