Notes

    • Frozen Veggies Time Saver: Using frozen carrots and peas saves you prep time without losing any of the fresh flavors. They cook up quickly, and since they’re already diced, you don’t have to worry about chopping or peeling.
    • Thickening the Sauce: When you add flour to the veggies before the chicken stock, it creates a roux that helps thicken the sauce. Make sure to stir well so there are no lumps, giving you a nice, creamy texture in the casserole.
    • Shredded Chicken Shortcut: Using pre-cooked or rotisserie chicken makes this recipe even quicker. Just shred it with a fork and toss it in. It’s perfect for using up leftovers or saving time on a busy night.
    • Dumpling Size: Keep your dumplings on the smaller side—about a tablespoon each. This helps them cook all the way through, staying fluffy inside without being doughy. If they’re too big, they might stay undercooked in the center.
    • Season to Taste: Start with the recommended amount of salt and pepper, but feel free to adjust to your liking. Depending on your chicken stock, you may want to reduce the salt or add a bit more for extra flavor. Don’t forget to taste as you go!
    • Baking Time Check: After 20 minutes, check the dumplings by inserting a toothpick or skewer into the center. If it comes out clean, they’re done. If not, give them a few extra minutes to ensure they’re fully cooked through.

Here are some of my top tips to get it just right:

How to Store Leftover Chicken and Dumpling Casserole

If you have leftovers, here’s how to store them properly to maintain the best flavor and texture:

If you have leftovers, it’s important to store them properly to maintain the best flavor and texture. Start by letting the casserole cool completely before transferring it to an airtight container.

You can store it in the fridge for up to 3 days. When you’re ready to reheat, the microwave works for a quick option, but to keep the dumplings from turning soggy, warming it in the oven at 350°F is a better choice. Simply heat until it’s warmed through.

Unfortunately, this casserole doesn’t freeze too well. The dumplings tend to get a bit soggy after thawing. However, if you really want to freeze it, here’s a trick: freeze the chicken and veggie mixture on its own, and then when you’re ready to eat, whip up a fresh batch of dumplings.

Bake it all together, and you’ll avoid the soggy dumpling problem while still enjoying a comforting homemade meal!

What to Serve with Chicken and Dumpling Casserole

This cozy casserole is pretty much a meal on its own, but if you’re looking to round it out, there are a few great options. Try serving it with some roasted vegetables, like broccoli or Brussels sprouts, for a pop of color and flavor.

For a little extra comfort, crusty bread is a perfect side to soak up all the creamy sauce. You could also go with mashed potatoes for a double dose of comfort food or some steamed green beans to keep things simple and classic.
